Instructions
Peel and dice the ripe mangoes, ensuring there are no fibrous pieces. Set them aside in a bowl.
Wearing gloves, remove the stems and chop the habanero peppers finely. Remove seeds for a milder sauce if desired.
Peel and mince the garlic cloves until they reach a paste-like consistency.
In a medium saucepan, combine the diced mango, chopped habanero peppers, minced garlic, and honey. Stir gently to combine.
Squeeze the lime juice into the saucepan and add salt. Stir again.
Place the saucepan over medium heat and allow the mixture to come to a gentle simmer, stirring occasionally.
Once simmering, reduce heat to low and cook for about 10 minutes.
Remove from heat and let cool slightly before blending.
Transfer the mixture to a blender and blend until smooth. Add water if the sauce is too thick.
Taste and adjust seasoning if necessary. Transfer to a sterilized jar or container.
Notes
This sauce can be stored in the refrigerator for up to two weeks.
