  • 1 pound Boneless, Skinless Chicken Breast Cut into strips for grilling.
  • 1 each Red Bell Pepper Sliced into thin strips.
  • 1 each Green Bell Pepper Sliced into thin strips.
  • 1 each Medium Onion Sliced.
  • 4 large Flour Tortillas For wrapping the burrito.
  • 1 teaspoon Cumin For seasoning the chicken.
  • 1 teaspoon Chili Powder For seasoning the chicken.
  • 1 each Lime Juice for marinating the chicken.
  • 1 handful Fresh Cilantro Chopped, for garnish.
  • 1 cup Shredded Cheese Optional, for filling.
  • 1 each Sour Cream For serving.
  • 1 each Salsa For serving.

Instructions
 

  • Cut the chicken breast into thin strips.
  • In a bowl, combine chicken strips with lime juice, cumin, chili powder, and salt. Marinate for at least 15 minutes.
  • Slice the bell peppers and onion, and set aside.
  • Preheat the grill or grill pan over medium-high heat.
  • Grill the marinated chicken strips for 5-7 minutes until cooked through.
  • Grill the sliced bell peppers and onions for 3-4 minutes until tender.
  • Warm the tortillas on the grill for 30 seconds on each side.
  • Assemble the burritos with grilled chicken, vegetables, cheese, and cilantro.
  • Fold and roll the tortillas tightly to enclose the filling.
  • Grill the assembled burritos for 1-2 minutes to crisp the outside.
  • Serve warm with sour cream and salsa.

Notes

For variations, consider adding jalapeños, using different proteins, or making it vegetarian.
