Instructions
Prepare all ingredients: chop cabbage, carrots, celery, and onion; mince garlic.
In a large pot, heat olive oil over medium heat. Add chopped onions and sauté for 3-4 minutes until translucent.
Add minced garlic and sauté for an additional minute.
Add diced carrots and celery, stir, and cook for 5 minutes.
Add chopped cabbage and stir to combine.
Pour in vegetable broth and add canned tomatoes with juices. Stir to combine.
Season with thyme, oregano, salt, and pepper. Bring to a gentle boil, then reduce heat and cover.
Simmer for 30 minutes, stirring occasionally.
Add green beans and simmer for an additional 10-15 minutes until tender.
Remove from heat and stir in lemon juice. Adjust seasoning if needed.
Serve hot, garnished with fresh herbs if desired.
