Ingredients
  

Vegetables

  • 0.5 medium Cabbage Chopped into bite-sized pieces.
  • 2 medium Carrots Peeled and diced.
  • 1 large Celery Chopped.
  • 1 medium Onion Chopped finely.
  • 4 cloves Garlic Minced.

Broth

  • 4 cups Vegetable Broth Low-sodium recommended.
  • 1 can Diced Tomatoes 14.5 ounces.

Green Beans

  • 1 cup Green Beans Fresh or frozen, trimmed and cut.

Herbs and Spices

  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Oregano
  • to taste Salt
  • to taste Pepper
  • 1 tablespoon Lemon Juice Fresh.
  • 2 tablespoons Olive Oil For sautéing.

Instructions
 

  • Prepare all ingredients: chop cabbage, carrots, celery, and onion; mince garlic.
  • In a large pot, heat olive oil over medium heat. Add chopped onions and sauté for 3-4 minutes until translucent.
  • Add minced garlic and sauté for an additional minute.
  • Add diced carrots and celery, stir, and cook for 5 minutes.
  • Add chopped cabbage and stir to combine.
  • Pour in vegetable broth and add canned tomatoes with juices. Stir to combine.
  • Season with thyme, oregano, salt, and pepper. Bring to a gentle boil, then reduce heat and cover.
  • Simmer for 30 minutes, stirring occasionally.
  • Add green beans and simmer for an additional 10-15 minutes until tender.
  • Remove from heat and stir in lemon juice. Adjust seasoning if needed.
  • Serve hot, garnished with fresh herbs if desired.

Notes

This soup is versatile; feel free to add other vegetables or proteins as desired.
