Instructions
 

  • Preheat your oven to 425°F (220°C).
  • Wash the carrots thoroughly and scrub them gently. Cut large carrots in half lengthwise if necessary.

  • Add balsamic vinegar, salt, and pepper to the bowl. Mix well to ensure even coating.
  • Line a baking sheet with parchment paper and spread the carrots in a single layer.
  • Roast the carrots for 25-30 minutes, tossing halfway through.
  • Check for doneness; they should be fork-tender and golden-brown.
  • Remove from the oven and drizzle with an additional tablespoon of balsamic vinegar.
  • Transfer to a serving platter and garnish with fresh herbs if desired. Serve warm.
