Instructions
Heat olive oil in a large pot over medium heat. Add diced onion and sauté for about 5 minutes until translucent.
Add minced garlic and sauté for 1-2 minutes until fragrant.
Add canned diced tomatoes with their juices and stir to combine.
Pour in vegetable broth and stir to incorporate all ingredients.
Sprinkle in sugar and dried basil, season with salt and pepper. Bring to a gentle boil, then reduce heat and simmer uncovered for 20 minutes.
Remove from heat and use an immersion blender to puree the soup until smooth.
If desired, stir in heavy cream and heat through for another 5 minutes. Adjust seasoning if needed.
Serve hot, garnished with fresh basil leaves if desired.
