Instructions
 

  • Heat olive oil in a large pot over medium heat. Add diced onion and sauté for about 5 minutes until translucent.
  • Add minced garlic and sauté for 1-2 minutes until fragrant.
  • Add canned diced tomatoes with their juices and stir to combine.
  • Pour in vegetable broth and stir to incorporate all ingredients.
  • Sprinkle in sugar and dried basil, season with salt and pepper. Bring to a gentle boil, then reduce heat and simmer uncovered for 20 minutes.
  • Remove from heat and use an immersion blender to puree the soup until smooth.
  • If desired, stir in heavy cream and heat through for another 5 minutes. Adjust seasoning if needed.
  • Serve hot, garnished with fresh basil leaves if desired.

Notes
