Ingredients
  

Beef

  • 2 pounds beef chuck roast, cut into 1-inch cubes Ideal for slow cooking as it becomes tender and flavorful.

Instructions
 

  • 1. Heat the vegetable oil in a large skillet over medium-high heat. Brown the beef cubes on all sides for about 5-7 minutes.
  • 2. Remove the browned beef and transfer it to the slow cooker. In the same skillet, add onion, garlic, and ginger. Sauté for 3-4 minutes until translucent.
  • 3. Add curry powder, cumin, coriander, and turmeric. Stir and cook for an additional minute.
  • 4. Pour in diced tomatoes and beef broth, scraping the skillet. Mix and transfer to the slow cooker.
  • 5. Add carrots and bell pepper to the slow cooker. Stir to combine.
  • 6. Pour in coconut milk, season with salt and pepper, and cover the slow cooker.
  • 7. Cook on low for 6-8 hours or high for 4-5 hours.
  • 8. Check seasoning and adjust if necessary. Garnish with cilantro before serving.

Notes

For variations, consider adding green chilies for heat or using different vegetables based on preference.
