Instructions
In a large mixing bowl, combine the ground lamb, grated onion, minced garlic, ground cumin, ground coriander, smoked paprika, salt, black pepper, and cayenne pepper (if using). Mix gently without overworking the meat.
Add the chopped parsley and mint, then pour in the beaten egg and breadcrumbs. Mix until well combined. The mixture should be moist but firm enough to hold its shape.
Cover the bowl with plastic wrap and refrigerate for about 30 minutes to help the flavors meld and make shaping easier.
Preheat your grill or oven to medium-high heat (about 375°F to 400°F). Soak wooden skewers in water for 30 minutes if using.
With wet hands, take a portion of the mixture and mold it around the skewers, shaping into elongated koftas.
Brush the koftas lightly with olive oil.
Cook on the grill for about 10-12 minutes, turning occasionally, or bake for 15-20 minutes, turning halfway through.
Remove from heat and let rest for a few minutes before serving.
Serve warm, garnished with additional parsley or mint if desired.
Notes
These koftas can be made ahead of time and stored in the refrigerator. They also freeze well for up to three months.
