Heavy cream

Instructions
Measure out 1 cup of granulated sugar.
In a medium-sized, heavy-bottomed saucepan, add the measured sugar and place over medium heat.
Stir gently with a wooden spoon as the sugar begins to melt.
Watch for the sugar to turn a rich amber hue, about 8 to 10 minutes.
Remove the saucepan from heat once the desired color is reached.
Add 6 tablespoons of unsalted butter to the saucepan and stir until melted.
Carefully pour in 1/2 cup of heavy cream while stirring continuously.
Return to low heat if necessary to dissolve any remaining sugar crystals.
Allow the caramel to cool slightly before transferring it to a glass jar.
Let it cool to room temperature before sealing and storing in the refrigerator.
Notes
Store in the refrigerator for up to two weeks. Reheat gently before serving.
