Instructions
1. Preheat your oven to 200°C (400°F).
2. Peel and cut the potatoes into chunks, boil in salted water for 15-20 minutes until fork-tender, then drain and return to pot.
3. Prepare the fish by cutting into bite-sized pieces and combine with smoked fish and optional peas or sweetcorn in a large saucepan.
4. In a separate saucepan, melt butter over medium heat, add flour and whisk for 1-2 minutes to create a roux.
5. Gradually pour in milk while whisking to avoid lumps, cook for 5-7 minutes until thickened, then stir in mustard and season.
6. Pour the sauce over the fish mixture and fold gently, then add chopped herbs.
7. For the mashed potatoes, add butter and a splash of milk, mash until smooth, seasoning with salt and pepper.
8. Spoon the fish mixture into a baking dish and top with mashed potatoes, creating peaks with a fork.
9. Bake for 25-30 minutes until the top is golden brown and filling is bubbling.
10. Allow to cool for a few minutes before serving.

Serve with a side salad or steamed vegetables for a complete meal.
