Ingredients
  

Fish

  • 500 grams white fish fillets (cod, haddock, or pollock) Boneless and skinless for best results.
  • 200 grams smoked fish (like smoked haddock) Adds depth and smokiness.

Potatoes

  • 300 grams potatoes Starchy varieties like Maris Piper or Yukon Gold recommended.

Sauce Ingredients

  • 50 grams butter For sauce and mashed potatoes.
  • 50 grams all-purpose flour For thickening the sauce.
  • 600 ml milk Whole milk recommended for richness.
  • 1 teaspoon Dijon mustard Adds a hint of sharpness.
  • 1 teaspoon fresh dill or parsley Chopped finely for added flavor.

Seasoning

  • Salt and pepper To taste.

Optional Ingredients

  • 100 grams frozen peas or sweetcorn Adds color and sweetness.

Instructions
 

  • 1. Preheat your oven to 200°C (400°F).
  • 2. Peel and cut the potatoes into chunks, boil in salted water for 15-20 minutes until fork-tender, then drain and return to pot.
  • 3. Prepare the fish by cutting into bite-sized pieces and combine with smoked fish and optional peas or sweetcorn in a large saucepan.
  • 4. In a separate saucepan, melt butter over medium heat, add flour and whisk for 1-2 minutes to create a roux.
  • 5. Gradually pour in milk while whisking to avoid lumps, cook for 5-7 minutes until thickened, then stir in mustard and season.
  • 6. Pour the sauce over the fish mixture and fold gently, then add chopped herbs.
  • 7. For the mashed potatoes, add butter and a splash of milk, mash until smooth, seasoning with salt and pepper.
  • 8. Spoon the fish mixture into a baking dish and top with mashed potatoes, creating peaks with a fork.
  • 9. Bake for 25-30 minutes until the top is golden brown and filling is bubbling.
  • 10. Allow to cool for a few minutes before serving.

Notes

Serve with a side salad or steamed vegetables for a complete meal.
