Instructions
Prepare your campfire by building it and allowing it to burn down until you have a steady bed of hot coals.
In a large pot, heat the olive oil over the campfire. Add the cubed meat, seasoning with salt and pepper. Sear until browned on all sides, about 5-7 minutes.
Add the chopped onion and minced garlic to the pot. Sauté for 2-3 minutes until the onion is translucent.
Stir in the diced potatoes, sliced carrots, and chopped celery. Cook for another 5 minutes, stirring occasionally.
Add the diced tomatoes with their juice and the broth. Stir to combine.
Sprinkle in the dried thyme and oregano, adjusting seasoning with salt and pepper as needed.
Cover the pot and place it over the hot coals. Simmer for 45 minutes to an hour, stirring occasionally.
Taste the stew and adjust seasoning if necessary.
Remove from heat, ladle into bowls, and garnish with chopped parsley.
Gather around the campfire and enjoy your Easy Campfire Stew.
