  • 4 medium Bell Peppers Choose vibrant colors such as red, yellow, or green.
  • 1 cup Cooked Rice Can use white, brown, or quinoa.
  • 1 lb Ground Meat or Legumes Use ground chicken, turkey, or lentils for a vegetarian option.
  • 1 medium Onion Finely chopped.
  • 2 cloves Garlic Minced.
  • 1 cup Tomato Sauce For drizzling over the stuffed peppers.
  • 1 cup Shredded Cheese Like mozzarella or cheddar.
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1/4 cup Fresh Herbs Such as parsley or basil, chopped.

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Prepare the bell peppers by cutting the tops off and removing the seeds and membranes. Rinse and place them upright in a baking dish.
  • In a skillet, heat olive oil over medium heat. Sauté chopped onions for 3-4 minutes until translucent.
  • Add minced garlic and cook for an additional minute.
  • If using ground meat, add it now and cook until browned. For vegetarian, add cooked lentils.
  • Fold in cooked rice and half of the tomato sauce. Season with salt, pepper, cumin, and paprika.
  • Remove from heat and mix in a portion of cheese with the filling.
  • Stuff each bell pepper with the filling, leaving room at the top for cheese.
  • Drizzle remaining tomato sauce over each pepper and sprinkle with remaining cheese.
  • Cover with foil and bake for 25 minutes. Remove foil and bake for another 10-15 minutes until cheese is bubbly.
  • Let cool for a few minutes before serving. Garnish with fresh herbs.

Notes

Store leftovers in an airtight container for up to three days. Reheat in the oven.
