Instructions
Preheat your oven to 375°F (190°C).
Prepare the bell peppers by cutting the tops off and removing the seeds and membranes. Rinse and place them upright in a baking dish.
In a skillet, heat olive oil over medium heat. Sauté chopped onions for 3-4 minutes until translucent.
Add minced garlic and cook for an additional minute.
If using ground meat, add it now and cook until browned. For vegetarian, add cooked lentils.
Fold in cooked rice and half of the tomato sauce. Season with salt, pepper, cumin, and paprika.
Remove from heat and mix in a portion of cheese with the filling.
Stuff each bell pepper with the filling, leaving room at the top for cheese.
Drizzle remaining tomato sauce over each pepper and sprinkle with remaining cheese.
Cover with foil and bake for 25 minutes. Remove foil and bake for another 10-15 minutes until cheese is bubbly.
Let cool for a few minutes before serving. Garnish with fresh herbs.
Notes
Store leftovers in an airtight container for up to three days. Reheat in the oven.
