Ingredients
  

Zucchini

  • 2 medium Zucchini Thinly sliced lengthwise.

Cheese Filling

  • 1 cup Ricotta Cheese Well-drained.
  • 1/2 cup Mascarpone Cheese
  • 1/2 cup Grated Parmesan Cheese Freshly grated.
  • 1 cup Shredded Mozzarella Cheese
  • 1/4 cup Crumbled Goat Cheese

Fresh Herbs

  • 1/4 cup Fresh Basil and Parsley Finely chopped.

Seasonings

  • 2 tablespoons Olive Oil For brushing zucchini.
  • 1 teaspoon Salt To taste.
  • 1/2 teaspoon Black Pepper Freshly ground, to taste.

Marinara Sauce

  • 1 cup Marinara Sauce For serving.

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Wash and trim the zucchinis, then slice them lengthwise into thin strips.
  • Sprinkle zucchini strips with salt and let sit for 15-20 minutes to draw out moisture.
  • In a mixing bowl, combine ricotta, mascarpone, Parmesan, mozzarella, and goat cheese until smooth.
  • Add chopped herbs, salt, and pepper to the cheese mixture and stir well.
  • Pat zucchini strips dry with a towel to remove excess moisture.
  • Line a baking sheet with parchment paper and drizzle with olive oil.
  • Take a zucchini strip, place 1-2 tablespoons of cheese filling at one end, and roll it up.
  • Place the roll-up seam-side down on the baking sheet. Repeat with remaining strips.
  • Drizzle the tops of the roll-ups with olive oil.
  • Bake for 20-25 minutes until zucchini is tender and cheese is bubbling.
  • Heat marinara sauce in a saucepan over low heat for serving.
  • Let roll-ups cool for a few minutes before serving with marinara sauce.

Notes

These roll-ups can be made ahead of time and frozen before baking. Serve with various dipping sauces for added flavor.
