Instructions
 

  • Preheat your oven to 350°F (175°C). Prepare a 15×10-inch jelly roll pan by lining it with parchment paper.
  • In a mixing bowl, whisk together the all-purpose flour, baking powder, and salt.
  • In a separate bowl, beat the eggs and granulated sugar using an electric mixer on medium speed for about 5 minutes until thick and pale.
  • Add the lemon zest to the egg mixture and mix well.
  • Gradually fold in the dry ingredients into the egg mixture until no flour streaks remain.
  • Pour the batter into the prepared jelly roll pan, spreading it evenly.
  • Bake for 10-12 minutes, or until the cake springs back when lightly pressed.
  • Dust a clean kitchen towel with powdered sugar and invert the cake onto it.
  • Starting from one short edge, roll the cake along with the towel while it’s still warm. Allow it to cool completely.
  • Prepare the blackberry filling by mashing the fresh blackberries in a bowl.
  • Once the cake is cool, gently unroll it and spread the blackberry filling evenly over the surface.
  • Carefully re-roll the cake without the towel and wrap it in plastic wrap. Refrigerate for at least 1 hour.
  • Before serving, dust the top with powdered sugar and slice into pieces.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days.
