Instructions
Preheat your oven to 350°F (175°C). Prepare a 15×10-inch jelly roll pan by lining it with parchment paper.
In a mixing bowl, whisk together the all-purpose flour, baking powder, and salt.
In a separate bowl, beat the eggs and granulated sugar using an electric mixer on medium speed for about 5 minutes until thick and pale.
Add the lemon zest to the egg mixture and mix well.
Gradually fold in the dry ingredients into the egg mixture until no flour streaks remain.
Pour the batter into the prepared jelly roll pan, spreading it evenly.
Bake for 10-12 minutes, or until the cake springs back when lightly pressed.
Dust a clean kitchen towel with powdered sugar and invert the cake onto it.
Starting from one short edge, roll the cake along with the towel while it’s still warm. Allow it to cool completely.
Prepare the blackberry filling by mashing the fresh blackberries in a bowl.
Once the cake is cool, gently unroll it and spread the blackberry filling evenly over the surface.
Carefully re-roll the cake without the towel and wrap it in plastic wrap. Refrigerate for at least 1 hour.
Before serving, dust the top with powdered sugar and slice into pieces.

Store leftovers in an airtight container in the refrigerator for up to 3 days.
