1. Rinse the red lentils under cold water and drain well.
2. In a large pot, heat the olive oil or ghee over medium heat. Add the chopped onions and sauté for 5-7 minutes until translucent.
3. Add the minced garlic and grated ginger, sauté for an additional 2 minutes.
4. Stir in the ground cumin, coriander, turmeric, and red chili powder, cooking for 1-2 minutes.
5. Add the rinsed lentils, pour in the vegetable broth, and bring to a gentle boil.
6. Reduce heat to low, cover, and simmer for 20-25 minutes until lentils are tender.
7. Stir in the coconut milk and simmer for an additional 5-10 minutes.
8. Season with salt and lime juice to taste.
9. Garnish with fresh cilantro before serving.
Notes
Store dahl in an airtight container in the refrigerator for up to three days or freeze for up to three months.
