Instructions
1. In a large mixing bowl, combine flour, sugar, yeast, and salt. Whisk until blended.
2. Heat milk in a saucepan until warm, then stir in softened butter until melted.
3. Pour milk mixture into dry ingredients and stir until a shaggy dough forms. Knead for 5-7 minutes until smooth.
4. Shape dough into a ball, place in a greased bowl, cover, and let rise for 1 to 1.5 hours until doubled.
5. Prepare cold butter by pounding it into a rectangle between parchment paper and chill.
6. Roll out risen dough into a rectangle, place chilled butter in the center, and fold edges over to encase.
7. Roll out again, fold into thirds, wrap, and chill for 30 minutes. Repeat twice.
8. Roll out final time, spread filling over, and roll tightly into a log. Cut into 12 pieces.
9. Place pieces in a greased muffin tin, cover, and let rise for another 30 minutes.
10. Preheat oven to 375°F (190°C). Brush tops with beaten egg.
11. Bake for 20-25 minutes until golden brown. Cool slightly before transferring to a wire rack.
12. Enjoy warm or store in an airtight container.
Notes
These pastries are best enjoyed fresh but can be reheated in the oven if needed.
