Instructions
 

  • Start by preparing your chicken. If using fresh chicken breasts, cut them into smaller chunks for even cooking, or use pre-cooked rotisserie chicken.
  • In a large mixing bowl, combine the cream of chicken soup, sour cream, shredded cheddar cheese, frozen mixed vegetables, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  • Place the chicken in the bottom of the slow cooker. Pour the creamy mixture over the chicken, ensuring it is evenly distributed. Gently stir to coat the chicken in the sauce.
  • Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours. Check the chicken for doneness; it should be cooked through and easily shreddable.
  • Once the chicken is fully cooked, remove it from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker, mixing it well with the creamy sauce and vegetables.
  • Spread the frozen tater tots evenly over the top of the chicken mixture, covering the entire surface.
  • Cover the slow cooker again and cook on high for an additional 30-60 minutes, until the tater tots are golden brown and crispy.
  • Once the tater tots are cooked to perfection, remove the lid and let it cool for a few minutes before serving.

Notes

Optional add-ins include diced bell peppers or a sprinkle of paprika for added flavor.
