  • 2 pounds Boneless Skinless Chicken Breasts Cut into bite-sized pieces.
  • 1 packet Ranch Dressing Mix
  • 2 cans Cream of Chicken Soup 10.5 ounces each.
  • 2 cups Frozen Mixed Vegetables A mix of peas, carrots, and green beans.
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Crispy Fried Onions
  • 2 tablespoons Olive Oil For sautéing.

Salt and Pepper

  • Salt To taste.
  • Pepper To taste.

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat olive oil over medium heat. Add chicken and cook for 5-7 minutes until no longer pink.
  • Season chicken with salt and pepper. Add frozen mixed vegetables and cook for an additional 3-4 minutes.
  • In a mixing bowl, combine ranch dressing mix and cream of chicken soup until smooth.
  • Fold the chicken and vegetable mixture into the creamy ranch mixture.
  • Pour the mixture into a greased 9x13-inch baking dish. Sprinkle cheddar cheese on top.
  • Add crispy fried onions on top of the cheese.
  • Bake for 25-30 minutes until cheese is bubbly and edges are golden brown.
  • Let the casserole rest for 5 minutes before serving.

Notes

This casserole can be customized with different vegetables or cheeses. It stores well and can be reheated.
