Instructions
Preheat your oven to 350°F (175°C).
In a large skillet, heat olive oil over medium heat. Add chicken and cook for 5-7 minutes until no longer pink.
Season chicken with salt and pepper. Add frozen mixed vegetables and cook for an additional 3-4 minutes.
In a mixing bowl, combine ranch dressing mix and cream of chicken soup until smooth.
Fold the chicken and vegetable mixture into the creamy ranch mixture.
Pour the mixture into a greased 9x13-inch baking dish. Sprinkle cheddar cheese on top.
Add crispy fried onions on top of the cheese.
Bake for 25-30 minutes until cheese is bubbly and edges are golden brown.
Let the casserole rest for 5 minutes before serving.
