Instructions
Prep your ingredients: mince the garlic, chop the parsley, and rinse the chicken thighs under cold water. Pat them dry with paper towels.
Heat a large pot or Dutch oven over medium-high heat. Add olive oil and heat until shimmering.
Place chicken thighs skin-side down into the hot pot. Sear for 5-7 minutes without moving until golden brown.
Flip the thighs and cook for another 5 minutes. Remove chicken and set aside.
Drain excess fat from the pot, leaving a tablespoon. Add minced garlic and sauté for 1-2 minutes until fragrant.
Return chicken to the pot, pour chicken broth over it, cover, and reduce heat to low. Simmer for 25-30 minutes.
Check internal temperature (should reach 165°F). Cook uncovered for an additional 5-10 minutes if needed.
Transfer chicken to a serving platter, drizzle with lemon juice, and sprinkle with parsley.
Serve immediately and enjoy!
