Instructions
Begin by preparing your ingredients. Chop the sun-dried tomatoes and mince the garlic. Rinse and dry the fresh spinach, then set aside.
In a large skillet, heat two tablespoons of olive oil over medium-high heat until it shimmers.
Season the chicken breasts with salt, pepper, and Italian seasoning on both sides. Cook for about 6-7 minutes on each side until golden brown and cooked through.
Remove the chicken from the skillet and set aside to rest.
In the same skillet, reduce heat to medium and add the minced garlic. Sauté for about 30 seconds until fragrant.
Add the sun-dried tomatoes and stir for about a minute.
Pour in the heavy cream, stirring well to combine. Allow to simmer for 2-3 minutes.
Add the fresh spinach and stir until wilted, about 2 minutes.
Return the cooked chicken to the skillet, spooning sauce over it. Simmer for another 3-5 minutes.
Adjust seasoning with salt and pepper. If using, sprinkle Parmesan cheese on top.
Once well combined, turn off the heat and prepare to plate your dish.
