  • 1 pound Chicken Breast Skinless, boneless, cut into bite-sized pieces.
  • 4 cups Fresh Spinach Packed with nutrients, wilts down significantly when cooked.
  • 2 medium Zucchini Spiralized to create noodles.
  • 1 cup Heavy Cream Provides creaminess to the sauce.
  • 3 cloves Garlic Minced to enhance flavor.
  • 1 medium Onion Finely chopped for sweetness.
  • 2 tablespoons Olive Oil For sautéing chicken and vegetables.
  • to taste Salt Essential seasoning.
  • to taste Pepper Essential seasoning.
  • 1/4 cup Parmesan Cheese Optional, for extra creaminess and flavor.

Instructions
 

  • Prepare ingredients: Rinse spinach, spiralize zucchinis, and cut chicken into pieces. Season chicken with salt and pepper.
  • Heat olive oil in a large skillet over medium heat. Sear chicken for 5-7 minutes until golden brown and cooked through. Remove and set aside.
  • Add chopped onion and minced garlic to the skillet. Sauté for 2-3 minutes until onion is translucent and garlic is fragrant.
  • Add fresh spinach to the skillet and cook for 3-4 minutes until wilted.
  • Pour in heavy cream and simmer for a few minutes until the sauce thickens slightly.
  • Return chicken to the skillet and cook for an additional 2-3 minutes. Adjust seasoning and add Parmesan cheese if desired.
  • Blanch zucchini noodles in boiling water for 1-2 minutes until al dente. Drain and set aside.
  • Serve zucchini noodles topped with creamy spinach chicken mixture. Garnish with additional Parmesan cheese if desired.
