Instructions
Prepare ingredients: Rinse spinach, spiralize zucchinis, and cut chicken into pieces. Season chicken with salt and pepper.
Heat olive oil in a large skillet over medium heat. Sear chicken for 5-7 minutes until golden brown and cooked through. Remove and set aside.
Add chopped onion and minced garlic to the skillet. Sauté for 2-3 minutes until onion is translucent and garlic is fragrant.
Add fresh spinach to the skillet and cook for 3-4 minutes until wilted.
Pour in heavy cream and simmer for a few minutes until the sauce thickens slightly.
Return chicken to the skillet and cook for an additional 2-3 minutes. Adjust seasoning and add Parmesan cheese if desired.
Blanch zucchini noodles in boiling water for 1-2 minutes until al dente. Drain and set aside.
Serve zucchini noodles topped with creamy spinach chicken mixture. Garnish with additional Parmesan cheese if desired.
