Instructions
Gather all your ingredients at your workspace.
In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium-high heat.
Add 1 pound of thinly sliced beef strips to the pot and sear for about 4-5 minutes until browned.
Stir the beef to cook the other side for an additional 2-3 minutes. Season with salt and pepper to taste, then remove from the pot.
Add an additional tablespoon of olive oil if necessary, then add 1 medium sliced onion and sauté for about 3-4 minutes until translucent.
Add 1-2 chopped bell peppers and cook for another 5 minutes until softened.
Stir in 3 cloves of minced garlic and cook for an additional 30 seconds until fragrant.
Return the browned beef to the pot and mix well with the vegetables.
Add 12 ounces of pasta and 2 cups of beef broth, stirring to ensure the pasta is submerged.
Bring to a boil, then reduce heat to low, cover, and simmer for about 12-15 minutes until pasta is cooked al dente.
Add 8 ounces of cream cheese and stir until melted and incorporated.
Sprinkle in 1 cup of shredded cheese, mixing until melted and creamy. Adjust seasoning with salt and pepper if needed.
Serve hot, garnished with fresh parsley if desired.
Notes
Consider adding mushrooms, making it spicy, or incorporating spinach for variations. Serve with garlic bread or a side salad.
