  • 2 cups Shredded Cooked Chicken Can use rotisserie chicken or leftover chicken.
  • 8 ounces Cream Cheese At room temperature.
  • 8-10 small Tortillas Corn or flour tortillas.
  • 1 cup Shredded Cheddar Cheese
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Cumin
  • 0.5 cup Salsa Can be mixed into the filling or served on the side.
  • as needed Cooking Oil For brushing the taquitos before baking.
  • to taste Salt and Pepper For seasoning.

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a mixing bowl, combine shredded chicken, cream cheese, cheddar cheese, garlic powder, onion powder, cumin, and salsa. Mix thoroughly.
  • Warm tortillas in the microwave for 20-30 seconds to soften.
  • Place 2-3 tablespoons of filling along one edge of a tortilla and roll tightly.
  • Place the rolled taquito seam-side down on a baking sheet lined with parchment paper.
  • Brush the tops of the taquitos with cooking oil.
  • Bake for 20-25 minutes or until golden brown and crispy.
  • Let cool for a few minutes before serving.
  • Serve with dipping sauces like guacamole, sour cream, or salsa.

Customize fillings with beans, cheese, or vegetables as desired.
