Instructions
Wash and peel the sweet potatoes, then cut them into uniform chunks (1 to 2 inches).
Place the sweet potato chunks in a large pot, cover with cold water, and add a teaspoon of salt.
Bring the water to a boil over medium-high heat, then reduce to a simmer and cook for 15-20 minutes until tender.
Drain the sweet potatoes and return them to the pot. Let them sit for a minute to release steam.
Add the butter and mash the sweet potatoes until smooth.
Gradually pour in the heavy cream while mashing until creamy.
Season with salt and black pepper to taste. Adjust seasoning as necessary.
Transfer to a serving bowl and garnish if desired. Serve warm.
