  • 1 pound Ground Beef Lean ground beef for a healthy source of protein.

Vegetables

  • 4 cups Cauliflower Rice Store-bought or homemade by pulsing fresh cauliflower.
  • 1 medium Onion Finely chopped.
  • 2 cloves Garlic Minced.

Dairy

  • 8 ounces Cream Cheese Softened for easy mixing.
  • 1 cup Shredded Cheese Cheddar or mozzarella for topping.

Seasonings

  • 1 teaspoon Salt To taste.
  • ½ teaspoon Black Pepper To taste.
  • 1 teaspoon Italian Seasoning For added flavor.

Oils

  • 1 tablespoon Olive Oil For sautéing.

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, add olive oil. Once hot, add the chopped onion and sauté for about 3 minutes until translucent.
  • Add minced garlic and ground beef to the skillet. Cook until browned, about 5-7 minutes.
  • Drain excess grease, then stir in cauliflower rice and mix well.
  • Add salt, black pepper, and Italian seasoning. Stir to combine.
  • In a separate bowl, soften cream cheese in the microwave for about 30 seconds. Mix into the beef and cauliflower mixture until well combined.
  • Transfer the mixture to a greased 9x13 inch baking dish and spread evenly.
  • Sprinkle shredded cheese on top.
  • Cover with aluminum foil and bake for 25 minutes.
  • Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden brown.
  • Allow to cool for 5 minutes before slicing and serving.
