  • 1 cup Low-sodium chicken broth Forms the base of the sauce.

  • 2 tablespoons Unsalted butter Enriches the sauce.

Instructions
 

  • Pat the chicken thighs dry with paper towels and season with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat. Add chicken thighs skin-side down and sear for 5-7 minutes until golden brown.
  • Flip the chicken and cook for another 5 minutes. Transfer to a plate and set aside.
  • In the same skillet, reduce heat to medium, add butter, and sauté minced garlic for 30 seconds.
  • Add sliced mushrooms and sauté for 5-7 minutes until tender.
  • Pour in chicken broth, scraping the bottom of the skillet. Stir in heavy cream.
  • Return chicken thighs to the skillet, skin-side up, and simmer for 15-20 minutes until cooked through.
  • Taste the sauce and adjust seasoning with salt and pepper as needed.
  • Remove from heat and sprinkle with parsley before serving.

Notes

For variations, consider adding red pepper flakes for heat or vegetables like spinach for added nutrition.
