Instructions
Pat the chicken thighs dry with paper towels and season with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Add chicken thighs skin-side down and sear for 5-7 minutes until golden brown.
Flip the chicken and cook for another 5 minutes. Transfer to a plate and set aside.
In the same skillet, reduce heat to medium, add butter, and sauté minced garlic for 30 seconds.
Add sliced mushrooms and sauté for 5-7 minutes until tender.
Pour in chicken broth, scraping the bottom of the skillet. Stir in heavy cream.
Return chicken thighs to the skillet, skin-side up, and simmer for 15-20 minutes until cooked through.
Taste the sauce and adjust seasoning with salt and pepper as needed.
Remove from heat and sprinkle with parsley before serving.
