Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan with butter or line it with parchment paper.
  • In a medium bowl, combine 2 cups of all-purpose flour, 1 cup of granulated sugar, and a pinch of salt. Mix well.
  • Add 1 cup of softened unsalted butter to the flour mixture and blend until it resembles coarse crumbs.
  • Press the crumb mixture evenly into the bottom of the prepared baking pan.
  • Bake the crust for about 15 minutes, or until lightly golden. Allow it to cool slightly.
  • In a large mixing bowl, beat 16 ounces of softened cream cheese until smooth.
  • Gradually add 1 cup of granulated sugar, mixing well until fully combined.
  • Incorporate 3 large eggs, one at a time, mixing on low speed until just combined.
  • Add 2 tablespoons of ground cinnamon and 1 teaspoon of vanilla flavoring to the mixture and blend until fully incorporated.
  • Stir in 1/4 cup of milk until the filling reaches a smooth consistency.
  • Pour the cheesecake filling over the pre-baked crust, spreading it evenly.
  • In a small bowl, combine 1/2 cup of granulated sugar with 1 tablespoon of ground cinnamon and sprinkle over the cheesecake filling.
  • Gently swirl the cinnamon mixture into the cheesecake filling.
  • Bake the cheesecake bars for 30-35 minutes, or until the edges are set and the center is slightly jiggly.
  • Allow the bars to cool in the pan for about 30 minutes, then refrigerate for at least 2 hours.
