Filling

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Prepare a baking sheet by lining it with parchment paper.
  • In a mixing bowl, combine the dry ingredients: flour, cocoa powder, sugar, baking powder, and salt. Whisk until well blended.
  • In a separate bowl, beat the eggs until frothy. Add milk and mix until combined.
  • Slowly pour the egg mixture into the dry ingredients, stirring gently until just combined.
  • Pour the batter onto the prepared baking sheet and spread evenly.
  • Bake for 12-15 minutes, until the cake springs back when pressed.
  • Remove from oven and cool in the pan for 5 minutes, then flip onto a powdered sugar-dusted towel.
  • While warm, roll the cake up using the towel and let cool completely.
  • Prepare the filling by mixing peanut butter and powdered sugar until smooth.
  • Whip the heavy cream until stiff peaks form, then fold into the peanut butter mixture.
  • Unroll the cooled cake and spread the filling evenly, then re-roll tightly.
  • Wrap in plastic wrap and refrigerate for at least 2 hours.
  • Remove from fridge, unwrap, and dust with powdered sugar before slicing.
