Instructions
Preheat your oven to 350°F (175°C).
Prepare a baking sheet by lining it with parchment paper.
In a mixing bowl, combine the dry ingredients: flour, cocoa powder, sugar, baking powder, and salt. Whisk until well blended.
In a separate bowl, beat the eggs until frothy. Add milk and mix until combined.
Slowly pour the egg mixture into the dry ingredients, stirring gently until just combined.
Pour the batter onto the prepared baking sheet and spread evenly.
Bake for 12-15 minutes, until the cake springs back when pressed.
Remove from oven and cool in the pan for 5 minutes, then flip onto a powdered sugar-dusted towel.
While warm, roll the cake up using the towel and let cool completely.
Prepare the filling by mixing peanut butter and powdered sugar until smooth.
Whip the heavy cream until stiff peaks form, then fold into the peanut butter mixture.
Unroll the cooled cake and spread the filling evenly, then re-roll tightly.
Wrap in plastic wrap and refrigerate for at least 2 hours.
Remove from fridge, unwrap, and dust with powdered sugar before slicing.
