  • 1 pound Boneless, Skinless Chicken Breast Cut into bite-sized pieces.
  • 2 cups Pasta Use your favorite type, such as penne or rotini.
  • 1 quart Low-Sodium Vegetable Broth Serves as the flavorful base.
  • 1 cup Heavy Cream Adds richness and smoothness.
  • 2 medium Carrots Diced.
  • 1 stalk Celery Chopped.
  • 3 cloves Garlic Minced.
  • 1 medium Onion Finely chopped.

  • 1 teaspoon Dried Thyme For seasoning.
  • 1 tablespoon Parsley Fresh, for garnish.

Instructions
 

  • Heat a large pot over medium heat and add a splash of olive oil. Once shimmering, add the diced onion and sauté until translucent, about 3-4 minutes.
  • Add the minced garlic and cook for an additional minute, stirring constantly.
  • Introduce the diced carrots and chopped celery, stirring for about 5 minutes until softened.
  • Add the chunks of chicken breast and cook for about 5-7 minutes until no longer pink.
  • Pour in the vegetable broth and bring to a gentle boil. Reduce heat to a simmer and add the pasta. Cook for about 10 minutes until al dente.
  • Slowly pour in the heavy cream, stirring continuously. Simmer for an additional 5 minutes.
  • Adjust seasonings with salt, black pepper, and dried thyme to taste.
  • Serve in bowls, garnished with fresh parsley.

Notes

Consider adding more vegetables or using different proteins for variations. Serve with crusty bread or a green salad.
