Introduce the diced carrots and chopped celery, stirring for about 5 minutes until softened.
Add the chunks of chicken breast and cook for about 5-7 minutes until no longer pink.
Pour in the vegetable broth and bring to a gentle boil. Reduce heat to a simmer and add the pasta. Cook for about 10 minutes until al dente.
Slowly pour in the heavy cream, stirring continuously. Simmer for an additional 5 minutes.
Adjust seasonings with salt, black pepper, and dried thyme to taste.
Serve in bowls, garnished with fresh parsley.
