Instructions
1. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Reserve ½ cup of pasta water, then drain.
2. In a skillet over medium heat, add olive oil and sauté the chopped onion for 3-4 minutes until translucent.
3. Add minced garlic and cook for 1-2 minutes, stirring to avoid burning.
4. Increase heat to medium-high, add chicken, season with salt and pepper, and cook until golden brown, about 6-8 minutes.
5. Reduce heat to medium, pour in heavy cream, and stir to combine.
6. Stir in grated Parmesan cheese until melted and sauce thickens. Adjust consistency with reserved pasta water if needed.
7. Fold in cooked pasta, ensuring it is well coated with the sauce. Adjust seasoning if necessary.
8. Simmer for a couple of minutes to meld flavors, then remove from heat and garnish with parsley.
9. Serve warm, optionally with a side salad or crusty bread.
Notes
Consider adding vegetables like spinach or bell peppers for extra nutrition. This dish can be made ahead of time and reheated.
