  • 1 pound Chicken Breast Fresh, boneless, and skinless
  • 2 cups Egg Noodles Classic choice for chicken noodle soup
  • 2 medium Carrots Diced
  • 2 stalks Celery Chopped finely
  • 1 medium Onion Diced
  • 2 cloves Garlic Minced
  • 6 cups Chicken Broth Low-sodium
  • 1 cup Heavy Cream For creaminess
  • 1 teaspoon Fresh Thyme Leaves
  • 1 teaspoon Salt To taste
  • 0.5 teaspoon Black Pepper To taste
  • 0.25 cup Parsley Chopped, for garnish

Instructions
 

  • Gather all your ingredients. Dice the chicken into bite-sized pieces and chop the vegetables.
  • In a large pot, heat a tablespoon of oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
  • Add the minced garlic and cook for an additional 1-2 minutes.
  • Add the diced chicken breast and cook for about 5-7 minutes until no longer pink.
  • Add the diced carrots and chopped celery, cooking for another 3-4 minutes.
  • Pour in the chicken broth and bring to a gentle simmer for 15-20 minutes.
  • Add the egg noodles and cook for 8-10 minutes until al dente.
  • Reduce heat to low and stir in the heavy cream, thyme, salt, and pepper.
  • Remove from heat and garnish with parsley before serving.
