Instructions
Gather all your ingredients. Dice the chicken into bite-sized pieces and chop the vegetables.
In a large pot, heat a tablespoon of oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
Add the minced garlic and cook for an additional 1-2 minutes.
Add the diced chicken breast and cook for about 5-7 minutes until no longer pink.
Add the diced carrots and chopped celery, cooking for another 3-4 minutes.
Pour in the chicken broth and bring to a gentle simmer for 15-20 minutes.
Add the egg noodles and cook for 8-10 minutes until al dente.
Reduce heat to low and stir in the heavy cream, thyme, salt, and pepper.
Remove from heat and garnish with parsley before serving.
