Instructions
Preheat your oven to 350°F (175°C).
In a large skillet, heat olive oil over medium heat. Add diced onion and sauté for 3-4 minutes until translucent.
Add minced garlic and sauté for an additional minute.
Stir in frozen mixed vegetables and cook for 5-7 minutes until tender.
In a mixing bowl, combine shredded chicken, sautéed vegetables, and chicken broth.
Pour in heavy cream and stir to combine.
Season with salt and pepper to taste.
Transfer mixture to a greased 9x13 inch baking dish.
In a separate bowl, mix Parmesan cheese and panko breadcrumbs, then sprinkle over the casserole.
Bake for 30-35 minutes until the topping is golden brown and bubbling.
Let sit for 10 minutes before serving.
