Preferably cremini or button, cleaned and sliced.

Instructions
Prepare your ingredients: cut chicken, clean and slice mushrooms, chop onion and garlic.
Heat olive oil in a large skillet over medium-high heat. Add chicken and sear for 5-7 minutes until golden brown.
Remove chicken from skillet and set aside.
Add chopped onion to the skillet and sauté for 3-4 minutes until softened.
Add minced garlic and sliced mushrooms, cooking for 5-6 minutes until mushrooms are tender.
Return chicken to the skillet and stir to combine.
Pour in chicken broth, scraping the bottom of the skillet to deglaze. Simmer for 2-3 minutes.
Reduce heat to low and stir in heavy cream. Cook for an additional 5 minutes until sauce thickens.
Season with salt and pepper to taste.
Remove from heat and garnish with fresh parsley.
Serve immediately over rice, pasta, or with bread.
Notes
This dish can be customized with various ingredients like spinach or different types of mushrooms.
