Instructions
Preheat your oven to 350°F (175°C).
In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent, about 3-4 minutes.
Add ground beef to the skillet, breaking it apart. Cook until browned, about 7-10 minutes. Season with salt and pepper.
Stir in chopped cabbage and cook for an additional 5 minutes until it begins to wilt.
In a mixing bowl, combine cream of mushroom soup and milk. Stir until well blended.
Pour the soup mixture over the beef and cabbage. Stir well to coat all ingredients.
Fold in 1.5 cups of shredded cheddar cheese, reserving the remaining half cup for topping.
Transfer the mixture to a greased 9x13-inch baking dish and spread evenly.
Sprinkle reserved cheddar cheese on top, followed by breadcrumbs if using.
Cover with aluminum foil and bake for 25 minutes.
Remove foil and bake for an additional 15-20 minutes until cheese is bubbling and golden brown.
Allow to cool for 5 minutes before serving.
Notes
This casserole can be made ahead of time and stored in the fridge. It also freezes well for quick meals later.
