  • 1 lb Ground Beef Lean ground beef is recommended.
  • 1 cup Elbow Macaroni Cook until al dente.
  • 1 small Onion Finely chopped.
  • 2 cloves Garlic Minced.
  • 1-2 cups Shredded Cheddar Cheese Adjust based on preference.
  • 4 cups Beef Broth Low-sodium preferred.
  • 1 cup Milk Whole milk is ideal.
  • 1 tbsp Yellow Mustard
  • 1 tsp Italian Seasoning Adjust to taste.
  • to taste Salt and Pepper

Garnish

  • 2 tbsp Chopped Green Onions For garnish.

Instructions
 

  • Heat a large pot over medium heat and add ground beef. Cook until browned, about 5-7 minutes.
  • Add chopped onion and minced garlic to the pot. Cook for another 3-4 minutes until onions are translucent.
  • Drain excess grease if necessary. Pour in beef broth and milk, stirring to combine.
  • Bring the mixture to a gentle simmer, then add elbow macaroni. Simmer for 8-10 minutes until pasta is al dente.
  • Gradually stir in shredded cheddar cheese until melted and creamy.
  • Add mustard, salt, pepper, and Italian seasoning. Stir and let flavors meld for 2-3 minutes.
  • Serve hot, garnished with chopped green onions.

Notes

This soup can be customized with vegetables or different cheeses. It stores well in the refrigerator for up to three days.
