Instructions
1. Cook the pasta according to package instructions, adding a pinch of salt to the boiling water. Drain and set aside, reserving a cup of pasta water.
2. In a large skillet, heat olive oil over medium-high heat. Add sliced sausage and sauté for 3-4 minutes until browned. Remove and set aside.
3. In the same pan, add chopped onion and bell pepper. Sauté for 5 minutes until softened. Add minced garlic and cook for an additional minute.
4. Add shrimp to the pan, cooking for 2-3 minutes on each side until pink and opaque. Avoid overcooking.
5. Return sausage to the skillet, add drained diced tomatoes, and stir to combine.
6. Pour in heavy cream, stirring well. Simmer for 5 minutes to thicken, adding reserved pasta water if needed.
7. Sprinkle in Cajun seasoning, salt, and pepper. Mix well to distribute flavors.
8. Add cooked pasta to the skillet, tossing gently to coat. Heat through for another minute or two.
9. Remove from heat, squeeze lemon juice if desired, and garnish with parsley and Parmesan before serving.
10. Serve hot and enjoy!
