Instructions
Heat olive oil in a large pot over medium heat. Sauté chopped onion for 3-4 minutes until translucent.
Add minced garlic and diced bell pepper, sauté for another 2-3 minutes.
Add shrimp, sprinkle with Cajun seasoning, and cook until shrimp turns pink, about 2-3 minutes.
Pour in chicken broth and bring to a simmer. Add pasta, ensuring it's submerged, and cover to cook for 10-12 minutes until al dente.
Reduce heat to low, stir in heavy cream, and simmer for an additional 2-3 minutes.
Remove from heat, stir in parsley, and adjust seasoning if needed. Serve warm.
Notes
For variations, consider adding seasonal vegetables or substituting shrimp with chicken. Adjust spice levels to taste.
