Instructions
Rinse and pat dry the blueberries. Set aside a handful for garnishing.
Combine blueberries with sugar in a mixing bowl and gently crush. Let sit for 10-15 minutes.
Zest one lemon and squeeze out 1/4 cup of lemon juice. Strain to remove seeds.
Add lemon juice and zest to the blueberry mixture and stir. Let sit for an additional 5 minutes.
In a separate bowl, whisk together heavy cream, whole milk, and salt until well blended.
Fold the blueberry mixture into the cream mixture gently.
Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions (about 20-30 minutes).
Transfer to an airtight container and freeze for at least 4 hours.
Let sit at room temperature for a few minutes before scooping. Serve with reserved blueberries.
