Ingredients
  

Pasta

Avocado

  • 2 Ripe Avocados Halved and pitted, essential for creaminess.

Vegetables

  • 1 cup Cherry Tomatoes Halved for sweetness and color.
  • 1 medium Cucumber Diced for crunch.
  • 0.25 small Red Onion Finely diced for tanginess.

Herbs

  • 1 handful Fresh Cilantro or Parsley Chopped for flavor enhancement.

Dressing

  • 1 juice Lemon Juice To brighten flavors and prevent browning.
  • 0.25 cup Extra Virgin Olive Oil For a silky dressing.

Seasoning

  • Salt and Pepper To taste.

Instructions
 

  • 1. Cook the pasta in salted boiling water until al dente. Drain and rinse under cold water.
  • 2. Mash the avocados in a bowl and mix in lemon juice.
  • 3. In a large mixing bowl, combine pasta, mashed avocado, cucumber, cherry tomatoes, and red onion.
  • 4. Add chopped herbs, olive oil, salt, and pepper. Toss gently to combine.
  • 5. Chill in the refrigerator for at least 30 minutes before serving.
  • 6. Serve cold or at room temperature, garnished with additional herbs if desired.

Notes

For added protein, consider adding cooked chicken or chickpeas. Customize with seasonal vegetables.
