Ingredients
  

Beef

  • 2-3 pounds Beef Chuck Roast Cut into 1-inch cubes.

Vegetables

  • 4 medium Carrots Peeled and sliced.
  • 4 medium Potatoes Cut into chunks.
  • 2 medium Onions Chopped.
  • 4 cloves Garlic Minced.
  • 4 cups Beef Broth Low-sodium recommended.
  • 2 tablespoons Tomato Paste
  • 2 leaves Bay Leaves Remove before serving.
  • 1 teaspoon Thyme Fresh or dried.

Seasoning

  • 1 teaspoon Salt Adjust to taste.
  • 0.5 teaspoon Black Pepper Freshly cracked.

Instructions
 

  • Cut the beef chuck roast into 1-inch cubes and season with salt and pepper.
  • In a skillet, heat oil over medium-high heat and sear the beef until browned on all sides.
  • Transfer the beef to the slow cooker.
  • Sauté onions and garlic in the skillet until translucent, then add to the slow cooker.
  • Add carrots and potatoes to the slow cooker.
  • In a bowl, mix beef broth, tomato paste, bay leaves, and thyme, then pour over the ingredients in the slow cooker.
  • Cover and cook on low for 8-10 hours or high for 4-6 hours.
  • Remove bay leaves before serving. Adjust seasoning if necessary.

Notes

For a thicker stew, mix cornstarch with water and stir into the stew before serving.
