Instructions
Cut the beef chuck roast into 1-inch cubes and season with salt and pepper.
In a skillet, heat oil over medium-high heat and sear the beef until browned on all sides.
Transfer the beef to the slow cooker.
Sauté onions and garlic in the skillet until translucent, then add to the slow cooker.
Add carrots and potatoes to the slow cooker.
In a bowl, mix beef broth, tomato paste, bay leaves, and thyme, then pour over the ingredients in the slow cooker.
Cover and cook on low for 8-10 hours or high for 4-6 hours.
Remove bay leaves before serving. Adjust seasoning if necessary.
Notes
For a thicker stew, mix cornstarch with water and stir into the stew before serving.
