Instructions
Cut the beef chuck roast into bite-sized cubes and season with salt and pepper.
In a large pot, heat oil over medium-high heat and sear the beef until browned on all sides.
Remove the beef and sauté the onion, carrots, and celery until softened.
Add minced garlic and sauté for an additional minute.
Return the beef to the pot, add beef broth, barley, bay leaves, and thyme. Stir to combine.
Bring to a gentle boil, then reduce heat and simmer for 1.5 to 2 hours until the beef is tender.
Remove bay leaves, adjust seasoning with salt and pepper, and serve hot.
