  • 1.5 pounds Beef Chuck Roast Cut into bite-sized cubes.
  • 1 cup Pearl Barley Cooks quickly and absorbs flavors.
  • 2 medium Carrots Diced.
  • 2 stalks Celery Chopped.
  • 1 medium Onion Finely chopped.
  • 2 cloves Garlic Minced.
  • 6 cups Beef Broth Rich and hearty base.
  • 2 leaves Bay Leaves To be removed before serving.
  • 1 teaspoon Dried Thyme Adds comforting earthiness.
  • to taste Salt For seasoning.
  • to taste Black Pepper Freshly cracked.

Instructions
 

  • Cut the beef chuck roast into bite-sized cubes and season with salt and pepper.
  • In a large pot, heat oil over medium-high heat and sear the beef until browned on all sides.
  • Remove the beef and sauté the onion, carrots, and celery until softened.
  • Add minced garlic and sauté for an additional minute.
  • Return the beef to the pot, add beef broth, barley, bay leaves, and thyme. Stir to combine.
  • Bring to a gentle boil, then reduce heat and simmer for 1.5 to 2 hours until the beef is tender.
  • Remove bay leaves, adjust seasoning with salt and pepper, and serve hot.
