Instructions
Prepare your ingredients by gathering all components listed above.
Trim the brisket of excess fat, leaving about a quarter-inch layer.
Season the brisket generously with salt, black pepper, and smoked paprika on both sides.
In a large skillet over medium-high heat, sear the brisket for about 3-4 minutes on each side.
Set the brisket aside to rest. In the same skillet, add the sliced onions and minced garlic. Sauté for about 5 minutes.
In your slow cooker, layer the sautéed onions and garlic at the bottom. Place the seared brisket on top, fat side up.
In a mixing bowl, combine the beef broth, Worcestershire sauce, and brown sugar, stirring until dissolved. Pour over the brisket.
Add the sliced carrots and potatoes around the brisket, ensuring they are nestled in the liquid.
Drop in the bay leaves and cover the slow cooker. Set it to low and cook for 8-10 hours.
Once done, remove the brisket from the slow cooker and let it rest for 15 minutes before slicing.
Strain the cooking liquid to make a sauce if desired, then slice the brisket against the grain and serve.
