  • 8 ounces Corned Beef, thinly sliced Look for high-quality corned beef from a deli.
  • 1/2 cup Sauerkraut, drained and rinsed Squeeze out excess moisture to prevent sogginess.
  • 4 ounces Swiss Cheese, sliced Can substitute with provolone for a different flavor.
  • 2 tablespoons Russian or Thousand Island Dressing Adds moisture and balances flavors.
  • 8 ounces Rye Bread, sliced Use light or dark rye based on preference.
  • 2 tablespoons Unsalted Butter For grilling the sandwich.

Instructions
 

  • Preheat your skillet or griddle over medium heat.
  • Gather all your ingredients and set up your work area.
  • Spread dressing on the unbuttered side of each slice of rye bread.
  • Layer half of the corned beef on one slice of bread.
  • Add sauerkraut over the corned beef.
  • Place Swiss cheese slices on top of the sauerkraut.
  • Top with the remaining corned beef and cover with the other slice of bread, dressing side down.
  • Butter the outer sides of the sandwich.
  • Place the sandwich in the hot skillet and press down gently with a spatula.
  • Cook for about 3-4 minutes until golden brown, then flip and cook the other side.
  • Remove from skillet and let it rest for a minute before slicing.
  • Cut the sandwich in half diagonally and serve immediately.

Notes

For variations, consider using different cheeses or adding fresh vegetables.
