Instructions
Preheat your oven to 350°F (175°C).
In a medium bowl, whisk together the flour, baking soda, salt, and cocoa powder.
In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
Add the egg and mint extract to the mixture and beat until well combined.
Gradually add the dry ingredients to the wet mixture and mix until just combined.
Fold in the chocolate chips using a spatula.
Prepare a baking sheet by lining it with parchment paper.
Drop rounded balls of dough onto the prepared baking sheet, leaving space between each cookie.
Bake for 10-12 minutes until the edges are set but the centers are soft.
Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
