Instructions
Prepare your ingredients: dice the carrots, chop the celery, finely chop the onion, and mince the garlic.
In a large pot, heat a tablespoon of olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
Add the minced garlic and sauté for an additional minute.
Incorporate the diced carrots and chopped celery into the pot. Stir well and let them cook for about 5 minutes.
Add the chicken breast to the pot and pour in the chicken broth, ensuring the chicken is submerged.
Bring to a boil, then reduce heat to low and cover. Simmer for 15-20 minutes until the chicken is cooked through.
Remove the chicken, shred it, and return it to the pot. Add the pasta and cook according to package instructions.
Adjust seasoning with salt and pepper, add thyme and parsley, and finish with lemon juice.
Let the soup simmer for an additional 2-3 minutes before serving hot.
Notes
For variations, consider adding leafy greens or using different pasta shapes. You can also use rotisserie chicken for a quicker option.
