  • 1 teaspoon Fresh Thyme Chopped for herbal flavor.
  • 1 teaspoon Fresh Parsley Chopped for garnish.

Instructions
 

  • Prepare your ingredients: dice the carrots, chop the celery, finely chop the onion, and mince the garlic.
  • In a large pot, heat a tablespoon of olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  • Add the minced garlic and sauté for an additional minute.
  • Incorporate the diced carrots and chopped celery into the pot. Stir well and let them cook for about 5 minutes.
  • Add the chicken breast to the pot and pour in the chicken broth, ensuring the chicken is submerged.
  • Bring to a boil, then reduce heat to low and cover. Simmer for 15-20 minutes until the chicken is cooked through.
  • Remove the chicken, shred it, and return it to the pot. Add the pasta and cook according to package instructions.
  • Adjust seasoning with salt and pepper, add thyme and parsley, and finish with lemon juice.
  • Let the soup simmer for an additional 2-3 minutes before serving hot.

Notes

For variations, consider adding leafy greens or using different pasta shapes. You can also use rotisserie chicken for a quicker option.
