Ingredients
  

Chicken

  • 2 pieces Boneless, skinless chicken breasts About 6-8 ounces each, pounded to even thickness.

Mushrooms

  • 8 ounces Fresh mushrooms Preferably cremini or button, cleaned and sliced thinly.

Flour

  • 1/2 cup All-purpose flour For dredging the chicken.

Butter

  • 2 tablespoons Unsalted butter Provides richness and flavor.

Olive Oil

  • 2 tablespoons Extra virgin olive oil For cooking.

Garlic

  • 1-2 cloves Minced garlic Add towards the end of cooking.

Chicken Broth

  • 1 cup Low-sodium chicken broth Essential for the sauce.

Herbs

  • 1 tablespoon Chopped fresh parsley For garnish.
  • 1 teaspoon Fresh thyme For flavor.

Salt and Pepper

  • Salt To taste.
  • Pepper To taste.

Instructions
 

  • 1. Prepare the chicken by pounding each breast to an even thickness of about 1/2 inch.
  • 2. Season both sides of the chicken breasts with salt and pepper.
  • 3. Dredge each chicken breast in flour, shaking off excess flour.
  • 4. Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat.
  • 5. Cook the chicken breasts for about 4-5 minutes on each side until golden brown and cooked through.
  • 6. Remove the chicken from the skillet and let it rest on a plate.
  • 7. In the same skillet, add the remaining butter and sliced mushrooms, sautéing until browned.
  • 8. Add minced garlic and cook for an additional 1-2 minutes until fragrant.
  • 9. Pour in the chicken broth, scraping the bottom of the skillet to deglaze.
  • 10. Allow the broth to simmer for 2-3 minutes to reduce slightly.
  • 11. Return the chicken to the skillet, spooning sauce over it, and simmer for an additional 2-3 minutes.
  • 12. Sprinkle in fresh thyme and parsley, stirring gently to combine.
  • 13. Serve immediately, garnished with additional parsley if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat gently in a skillet.
