Instructions
1. Prepare the chicken by pounding each breast to an even thickness of about 1/2 inch.
2. Season both sides of the chicken breasts with salt and pepper.
3. Dredge each chicken breast in flour, shaking off excess flour.
4. Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat.
5. Cook the chicken breasts for about 4-5 minutes on each side until golden brown and cooked through.
6. Remove the chicken from the skillet and let it rest on a plate.
7. In the same skillet, add the remaining butter and sliced mushrooms, sautéing until browned.
8. Add minced garlic and cook for an additional 1-2 minutes until fragrant.
9. Pour in the chicken broth, scraping the bottom of the skillet to deglaze.
10. Allow the broth to simmer for 2-3 minutes to reduce slightly.
11. Return the chicken to the skillet, spooning sauce over it, and simmer for an additional 2-3 minutes.
12. Sprinkle in fresh thyme and parsley, stirring gently to combine.
13. Serve immediately, garnished with additional parsley if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. Reheat gently in a skillet.
