  • 1 pound Peeled and deveined shrimp Add towards the end of cooking.

Vegetables

Seasoning

  • 1 tablespoon Cajun seasoning For signature flavor.
  • 4 cups Low-sodium chicken broth Cooking liquid for the pasta.
  • 1 can (14.5 ounces) Diced tomatoes, drained Adds acidity and brightness.

Instructions
 

  • 1. Boil water in a large pot, add a pinch of salt, and cook the pasta according to package instructions until al dente. Drain and set aside.
  • 2. In a large skillet, heat olive oil over medium heat. Add diced onion and sauté for about five minutes until translucent.
  • 3. Add minced garlic and diced bell peppers, cooking for an additional three to four minutes until tender.
  • 4. Introduce chicken pieces to the skillet. Cook for six to eight minutes until browned and no longer pink.
  • 5. Sprinkle in Cajun seasoning, stirring to coat chicken and vegetables evenly.
  • 6. Add diced tomatoes and chicken broth, bringing to a gentle simmer for about five minutes.
  • 7. Fold in the cooked pasta, mixing well until combined.
  • 8. Add shrimp and stir gently, cooking for an additional three to four minutes until shrimp are pink and opaque.
  • 9. Taste and adjust seasoning with salt and pepper as needed. Let sit for a few minutes before serving.
  • 10. Serve hot, garnished with fresh parsley or green onions.

Notes

For variations, consider different proteins or adding vegetables. For a creamier dish, stir in heavy cream or top with cheese.
