Instructions
1. Boil water in a large pot, add a pinch of salt, and cook the pasta according to package instructions until al dente. Drain and set aside.
2. In a large skillet, heat olive oil over medium heat. Add diced onion and sauté for about five minutes until translucent.
3. Add minced garlic and diced bell peppers, cooking for an additional three to four minutes until tender.
4. Introduce chicken pieces to the skillet. Cook for six to eight minutes until browned and no longer pink.
5. Sprinkle in Cajun seasoning, stirring to coat chicken and vegetables evenly.
6. Add diced tomatoes and chicken broth, bringing to a gentle simmer for about five minutes.
7. Fold in the cooked pasta, mixing well until combined.
8. Add shrimp and stir gently, cooking for an additional three to four minutes until shrimp are pink and opaque.
9. Taste and adjust seasoning with salt and pepper as needed. Let sit for a few minutes before serving.
10. Serve hot, garnished with fresh parsley or green onions.
