Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and cook for about 5 minutes until translucent.
  • Add minced garlic and cook for another minute.
  • Incorporate diced bell peppers and cook for 4–5 minutes.
  • Add ground beef to the center of the pot and brown for 6–8 minutes.
  • Season with salt, pepper, chili powder, and cumin.
  • Pour in diced tomatoes and stir to combine.
  • Add kidney beans and stir well.
  • Pour in beef broth and stir to combine.
  • Bring to a gentle boil, then reduce heat and simmer for 30–40 minutes.
  • Stir occasionally and adjust seasoning as necessary.
  • Remove from heat and let rest before serving.
  • Ladle into bowls and add garnishes as desired.
