Instructions
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook for about 5 minutes until translucent.
Add minced garlic and cook for another minute.
Incorporate diced bell peppers and cook for 4–5 minutes.
Add ground beef to the center of the pot and brown for 6–8 minutes.
Season with salt, pepper, chili powder, and cumin.
Pour in diced tomatoes and stir to combine.
Add kidney beans and stir well.
Pour in beef broth and stir to combine.
Bring to a gentle boil, then reduce heat and simmer for 30–40 minutes.
Stir occasionally and adjust seasoning as necessary.
Remove from heat and let rest before serving.
