For sautéing.
Instructions
Preheat your oven to 350°F (175°C).
Bring a large pot of salted water to a boil and cook the egg noodles until al dente, about 7-8 minutes. Drain and set aside.
In a skillet, heat olive oil over medium heat. Sauté the diced onion for 3-4 minutes until translucent.
Add minced garlic and sauté for an additional minute.
Add ground chicken to the skillet and cook until browned, about 5-6 minutes.
Stir in mixed vegetables and cook for another 3-4 minutes until heated through.
Add cream of mushroom soup, mixing well. Season with salt and pepper.
In a mixing bowl, combine cooked egg noodles with the chicken mixture.
Transfer to a greased 9x13-inch baking dish and spread evenly.
Sprinkle shredded cheese on top.
Cover with aluminum foil and bake for 25 minutes.
Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden brown.
Let sit for 5 minutes before serving.
