  • 300 g dark chocolate Choose a high-quality chocolate with at least 70% cocoa.
  • 150 g unsalted butter Make sure the butter is at room temperature.
  • 100 g golden syrup Acts as a binding agent.
  • 200 g digestive biscuits Broken into chunks.
  • 100 g mixed nuts A combination of almonds, hazelnuts, and walnuts.
  • 150 g dried apricots Chopped into small pieces.
  • 1 large orange zest Freshly grated.
  • 1 pinch sea salt Enhances the chocolate flavor.
  • extra orange slices or candied orange peel Optional for garnish.

Instructions
 

  • Line a square baking dish (approximately 8-inch x 8-inch) with parchment paper.
  • In a large heatproof bowl, combine the dark chocolate and unsalted butter. Melt over a pot of simmering water or in the microwave.
  • Stir in the golden syrup until fully incorporated.
  • In a separate bowl, mix together the broken digestive biscuits, chopped mixed nuts, dried apricots, and orange zest.
  • Fold the dry ingredients into the melted chocolate mixture until evenly coated.
  • Add a pinch of sea salt and fold it into the mixture.
  • Pour the mixture into the prepared baking dish and spread it evenly.
  • Chill in the refrigerator for at least 3-4 hours until firm.
  • Once set, lift out of the dish and slice into squares or rectangles.

Notes

This dessert can be made a day or two in advance. Store in an airtight container in the refrigerator.
