Peanut Butter Filling

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Grease a standard muffin tin with coconut oil or use silicone muffin cups.
  • In a large mixing bowl, combine rolled oats, chopped nuts, seeds, cocoa powder, and a pinch of salt. Stir until evenly mixed.
  • In a separate bowl, mix melted coconut oil, honey or maple syrup, and vanilla extract. Whisk until smooth, then pour over dry ingredients and stir until combined.
  • Press a generous tablespoon of the granola mixture into the bottom and sides of each muffin cup.
  • Bake for about 10-12 minutes, or until edges are golden and fragrant.
  • Let cool for 5 minutes, then carefully run a knife around edges to release cups and cool completely on a wire rack.
  • In a clean mixing bowl, combine creamy peanut butter and powdered sugar. Mix until smooth.
  • Fill each granola cup with the peanut butter mixture.
  • Chill in the refrigerator for at least 30 minutes to set.
  • Serve chilled or at room temperature.
